Adapted from A Feast of Ice and Fire
This spice mix is aptly named—poudre fort means “strong powder” in French. Used in many medieval recipes, it uses bold seasonings like ginger and mace. I like to use it in recipes that normally just call for black pepper (such as my Kidney, Pork Belly, and Mushroom Pie), since this adds a bit of a bite and some extra depth.
To make, simply mix equal parts of each of the following ingredients, grinding them first in a spice mill if necessary:
Black pepper
Cinnamon
Mace
Powdered ginger
Cloves
Grains of paradise
